Everyone here works out of the same shop rather than renting a booth and disappearing, so if your artist is away someone who knows your piece is still on the floor.

Choosing
How to pick who to sit with
Look at the Instagram accounts above rather than reading about them here. In this trade the feed is the portfolio, and a couple of minutes scrolling will tell you more about whether someone draws the way you like than any paragraph we could write.
If you genuinely do not mind, say so when you ring. We will put you with whoever suits the piece and has the soonest opening, which is usually the fastest way to get sat down.
And if you have already had work here, ask for the same artist. Matching someone else's line weight and shading is harder than starting fresh, and continuity is worth waiting a bit longer for.

Tell us who you want to sit with and roughly what you are after. If they are booked a long way out we will say so rather than leaving you waiting on a reply.
